Tuna & Tomato Frittata

   

Eggs are one of the most cheap, versatile, and yummy ingredients to work with! I recently have been experimenting with Frittatas at home. I am happy to share with you one of my favorites (my one year old LOVES this one too!).

TUNA & TOMATO FRITTATA

Start with eggs (Duh!)

Add Milk

A little flour goes in next.

Salt & pepper. (Go easy on the salt. The tuna will add more salt flavor as well)

Whisk together.

Add Tuna. (I wanted extra tuna, so I added two cans)

Of course... lots of cheese!!!

It's summer! Let's take advantage of all the yummy tomatoes available to us!

Heat a medium or large oven-safe skillet. Sauté half an onion in a little butter.

When the onions are looking translucent, pour your egg mixture into the pan.

Add a little more cheese to the top. (What can I say...I can't resist more cheese!!!)

Turn burner to low and cover with a lid.

After 7-8 minutes, uncover and place pan under broiler on low.

Loosen sides and dump onto a plate. Cut a wedge and serve!

TUNA & TOMATO FRITTATA

5 Eggs

1 C. Milk

1 Tbsp Flour

1/4 Tsp Salt

1/4 Tsp Pepper

1-2 Cans Tuna packed in water, drained

1/2 C. diced Tomatoes

3/4 C. + 1/4 C. shredded Cheddar Cheese

1/4 C. diced Onion

1 Tbsp Butter

In a bowl whisk eggs, milk, flour, salt & pepper together. Add tuna, tomatoes, & 3/4 C. cheese and stir gently to combine. Heat a large oven safe skillet and sauté onions in butter until translucent. Pour in egg mixture. Sprinkle remaining cheese on top. Cover with a lid and turn burner to low for 7-8 minutes. Remove lid and place skillet in oven under a low broiler for 4-5 minutes until eggs are set and top is browned. Loosen edges of Frittata and slide onto a plate. Cut a wedge and enjoy!
