Recently, my Hubby took me out on a date to an Italian Restaurant. I am obsessed with Italian food! One of my favorite things about Italian food is how fresh and complex the flavors are, but they are so easy to recreate!
Here is a classic appetizer Salad. So easy! So fast! Soooo Yummy!
Tomato Basil Mozzarella Salad
Start with tomatoes. You can really use any kind if tomato. Roma tomatoes are classic as are cherry tomatoes. Whatever kind you choose, be sure they are firm. No mushy tomatoes in this salad!
I chose cherry tomatoes and sliced them in half.
Fresh Basil is key to this recipe! You will not get the same result with dried. Fresh basil is pretty easy to grow in your kitchen window.
Stack your basil leaves and roll them tightly together and chiffonade them. (Chiffonade-Big word for cutting herbs into strips)
Most grocery stores carry mozzarella balls in the deli section. (I love them! They are so cute!)
Cut the mozzarella balls in half.
Garlic! (I cheat and buy the gariic in the jar ready to go!)
Put in a teaspoon of diced garlic.
Next add oil and balsamic vinegar.
Grind in some pepper and some sea salt and toss together.
Let it sit for a bit to let all the flavors meld together. (If you can wait that long...)

TOMATO BASIL MOZZARELLA SALAD
10 oz. Cherry Tomatoes - halved
8 oz. Mozzarella balls - halved
3 Tblsp. Fresh Basil - Chopped
1 Tsp. Diced Garlic
4 Tblsp. Extra Virgin Olive Oil
2 Tblsp. Balsamic Vinegar
Salt and Pepper
Mix all ingredients thoroughly together. Allow to sit and flavors marry. Keep cold. Serve with some crusty bread.
