Who doesn't love Taco Night? We have tacos on the weekly dinner menu almost every week. They are fast and tasty. When you get tired of the plain ground beef tacos, step things up by making this super easy and over the top, yummy Shredded Chipotle Beef. Serve in some warmed corn tortillas... Mmmm.... Mmmmm......

SHREDDED CHIPOTLE BEEF TACOS

Begin by sprinkling Salt, Pepper and Chipotle Seasoning all over your Round Sirloin Roast.

Heat up your dutch oven to smoking' Hot! Place the meat in seasoned side down and listen to it sizzle. Season back side and flip after 4 minutes.

Pour in a can of Root Beer. The sugars in the root beer are going to caramelize and make the chipotle flavors pop.

Sprinkle in a touch more Chipotle Seasoning and a little Chili Powder.

Cover and set in 300˚ oven for 2 hours.

Check the meat at one hour for liquid level. Add a little water if the liquid is getting low.

When meat is shredding, it is done. Shred completely with two forks.

Toss in some fresh Cilantro.

Add some Pico De Gallo or homemade Salsa, along with black beans, cheese, and maybe a quick chipotle coleslaw.

SHREDDED CHIPOTLE BEEF TACOS

3 lb. Round Sirloin Roast

1/2 Tsp Salt

1/2 Tsp Black Pepper

2 Tbsp Chipotle Seasoning, divided

1 Can Root Beer

2 Tsp Chili Powder

Fresh Cilantro

Season one side of meat with half salt, pepper, and 1 Tbsp Chipotle seasoning. Heat up dutch oven with 2 tbsp oil. Carefully place meat in pan. Sear for 4 minutes. Season other side of meat. Flip meat over. Pour in can of root beer, remaining Chipotle seasoning and chili powder. Cover and place in 300˚ oven for 2 hours. Check liquid level at 1 hour and add water if necessary. Meat is done when it can be shredded with a fork. Shred meat and add fresh cilantro for garnish. Build taco. ENJOY!
