Parmesan Roasted Squash & Tomatoes

   

Have you been tempted by the colorful and lush displays of vegetables everywhere you turn? I am and can't resist them. And although I admit to buying probably slightly more then I need... I am loving the new recipes popping up all over the internet and inspiration juices for twists on old & new recipes are flowing!

This recipe is fun, colorful and is baked in a small pan, which leaved plenty of room in the oven for roasting a chicken to go along with it!

PARMESAN ROASTED SQUASH & TOMATOES

Start with some very vibrant and awesome veggies!

Thinly slice your squash.

And then the zucchini. Try to cut everything the same thickness.

Next the tomato. My tomato was quite round. So I cut some of the larger circles in half for layering.

Layer your veggies in a greased loaf pan.

Finely chop a half an onion.

Add the onion to 3/4 C of tomato sauce.

A nice pile of garlic goes in next.

Season the sauce with Italian Seasoning and Salt & Pepper.

Spoon sauce over top of veggies.

Drizzle Olive Oil on top.

Roast in oven for a little while. Then pull out your veggies and top with Parmesan Cheese.

Put back in the oven until cheese is nice and melted and turning brown.

Makes a beautiful and healthy side dish for any meal!

PARMESAN ROASTED SQUASH & TOMATOES

1 large Zucchini

1 large Squash

1 large Tomato

1/2 large Onion, finely diced

3/4 C. Tomato Sauce

1 Tbsp diced Garlic

1 Tsp Italian Seasoning

1 Tsp Salt

1/4 Tsp Ground Black Pepper

3 Tbsp Extra Virgin Olive Oil

3/4 C. Parmesan Cheese

Slice your vegetables in circles approx. the same thickness. (Cut tomato slices in half if needed) Layer your vegetables in a greased loaf pan. In a small bowl, combine tomato sauce, onion and seasonings. Spoon over vegetables. Drizzle Olive Oil over the vegetables. Roast in 400˚ oven for 20 minutes. Remove from oven. Sprinkle parmesan cheese over the top. Return to oven and cook for 8-10 min more or until cheese is brown and bubbly. Enjoy!
