Oatmeal Craisin Breakfast Cookies with Orange Glaze

   

I am always looking for recipes to replace the urge to grab a pop tart or other not-so-great-for-you, quick and ready breakfast item. We love oatmeal, but it's getting to warm to eat it in the morning. So, I came up with this low-fat Oatmeal Cookie recipe. (Who doesn't want cookies for breakfast?!)

They are really simple to throw together and taste super yummy! (Dad and Kids tested and Approved!

You can mix these up by hand or if you have a mixer let it do the work for you.
OATMEAL CRAISIN BREAKFAST COOKIES with ORANGE GLAZE

Start with Greek Yogurt. (Greek yogurt replaces the butter/shortening in this recipe!)

I love that I can add protein and take out fat at the same time!

Next add Brown Sugar.

Then some White Sugar.

Marry the yogurt and sugars.

Add Vanilla.

Then your eggs and mix 'em in.

Keeping healthy on a roll... use Whole Wheat Flour

Add the rest of the dry ingredients and mix. (Baking soda, salt, cinnamon, & nutmeg)

Mix in the Oats.

Add the Craisins.

Scoop dough with an ice cream scoop onto cookie sheet lightly sprayed with cooking spray.

Bake at 350˚ for 13-15 minutesIMG_0182

 

Allow cookies to cool. And mix up orange glaze.

Dunk cookies into glaze.

Allow glaze to harden.

OATMEAL CRAISIN BREAKFAST COOKIES with ORANGE GLAZE

(Makes approx. 2 dozen cookies)

1 C. Greek Yogurt

2/3 C. Brown Sugar

1 C. White Sugar

2 tsp. Vanilla

2 Eggs

2 1/2 C. Whole Wheat Flour

1 tsp. Baking Soda

1 tsp. Salt

1/2 tsp. Nutmeg

1 tsp. Cinnamon

2 C. Oats

1 Heaping Cup of Craisins

Combine yogurt and sugars together. Mix in vanilla and eggs. Add flour, baking soda, salt, nutmeg and cinnamon and mix. Stir in oats. Mix in Craisins. Spray cookie sheets lightly with cooking spray. Scoop using large ice cream scoop. Bake at 350˚ for 13-15 minutes. Cool and glaze.

Glaze:

3/4 C. Powdered Sugar

1 Tblsp. Orange Juice

Stir together to make a thin glaze.
