Hearty Veggie & Ground Beef Stroganoff

   

Are you like me and finding yourself in love with all the veggies in at the Farmers Markets and Grocery stores? The bright and colorful displays  are gorgeous! I am determined to make the most of the summer produce and veggie-up all my go-to recipes. This Stroganoff recipe is super simple, but so delicious served over rice or pasta. Grab yourself some giant zucchinis and let's get cooking!

HEARY VEGGIE & GROUND BEEF STROGANOFF

I love Zucchini! This one was a big-un!

Since it was so big, the seeds needed to be scooped out. Slice in half and use a spoon to dig out two strips of seeds.

Have yourself a good cry (If you need it...) over a large onion

If you are a mushroom fan... Well, chop yourself a big pile and add it to your bowl of chopped veggies!

Brown 1 lb of ground beef.

Add your all your chopped veggies to your sizzling ground beef.

And Dump some more...

That's a lot of veggie goodness! Add some salt and pepper.

Drizzle a little olive oil over the veggies and mix it all around.

When your veggies have started to soften, add a big ol' pile of garlic!

A little Worcestershire sauce.

A little soy sauce.

Now it is apparent that we need more veggies... So, grab some tomatoes and chop 'em up!

And throw 'em in!

Add some beef stock and sour cream to your pan to create a beautiful sauce.

HEARTY VEGGIE & GROUND BEEF STROGANOFF

1 1/2 C. diced Zucchini

1 large Onion, diced

1 1/2 C. chopped Mushrooms

1 lb. Ground Beef

1/4 tsp Salt

1/4 tsp Ground Black Pepper

2 Tbsp Olive Oil

1 Tbsp diced garlic

1 Tbsp Soy Sauce

1 Tbsp Worcestershire Sauce

1 C. diced Tomatoes

1 C. Beef Broth

1/4 C. Sour Cream

Rice

In a large skillet, brown ground beef. When beef is cooked, add zucchini, onion, and mushrooms. Sprinkle salt & pepper over veggies. Add olive oil. Stir and sauté to soften veggies. Add garlic, soy sauce, & Worcestershire sauce. Stir and allow flavors to marry. Add tomatoes. Stir in beef broth and sour cream to create sauce. Cook until thickened slightly. Serve over rice or noodles. Enjoy!
