Ham & Asparagus Quiche

   

One of my most favorite dishes to eat is Quiche.  I almost always order it when I am at a restaurant that has it listed on the menu. I have discovered it is really quite easy to make myself at home! There are endless variations on what you can put inside your Quiche. This is one of my favorite.

HAM & ASPARAGUS QUICHE

It is Asparagus season! These pretty spears are gorgeous and delicious! You only need a few for this recipe. The rest you can have as a side dish of a gorgeous grilled steak.

Chop up your asparagus. (I like small pieces, but you can make them as large or small as you wish)

Dice some thin sliced ham

Grate a good pile of cheddar and colby jack cheese.

Crack five eggs into a bowl.

Pour in half & half.

Whisk in 3 Tablespoons of flour. (Get out the lumps!)

Add salt and fresh ground black pepper.

You can certainly make your own pie crust for your quiche. I love a good from scratch crust! But it is extremely convenient and still tasty to use a refrigerated, pre-done crust. (Don't worry, everyone will still think you amazing whether it's pre-done or not!)

Lay out your crust in a 9 inch pie pan. Prick it with a fork.

Spread the asparagus and ham on the bottom of the pan. Snip some green onions on top.

Sprinkle your grated cheddar and colby-jack cheese and add some parmesan for good measure.

Pour your egg mixture evenly over everything. Oh! And don't forget to place your pie pan on a baking sheet. You do NOT want to transfer this full sucker into the oven and spill all over. TRUST ME!

And then add more parmesan cheese! (You can never have enough cheese!)

Transfer into the oven.

While it's baking, make silly faces at your babies and clean up!

When it's done it will be a little poofey.

Once cooled down it will sink a bit in the middle.

Serve this baby room temperature or slightly warmed. Mmmmmm....

HAM & ASPARAGUS QUICHE

1/2 C. Chopped Asparagus

1/2 C. Diced Ham

3 Tbsp. Chopped Green Onions

5 Eggs

1 1/2 C. Half & Half

3 Tbsp. Flour

1/2 tsp. Salt

1/4 Black Pepper

1 C. Grated Cheddar Cheese

1 C. Grated Colby-Jack

1/4 C. Parmesan Cheese

1 Pie Crust

Crack eggs into a large bowl, add half & half, flour and salt & pepper, whisk until smooth. Lay pie crust into a 9 inch pie pan and prick with a fork. Place pie pan on a baking sheet for smooth transfer to oven. Spread ham, asparagus, green onions, and cheeses in the pie crust. Pour the egg mixture evenly over the pan. Sprinkle a little more cheese on top if desired. Bake at 350˚ for 60-70 minutes. Allow to cool for at least 10 minutes. Serve warm or room temperature.
