It's summertime and that means easy and quick dinners needed that won't heat up the whole house!
I love grilled chicken sandwiches when we go out for lunch or dinner! There are so many creative ways to do a chicken sandwich. This garlic & lime marinated chicken sandwich is so yummy! Serve it with some tortilla chips and salsa or nacho cheese.
GRILLED GARLIC & LIME CHICKEN SANDWICH with CHIPOTLE MAYO
Place some thin cut chicken breasts in a bowl. (You can buy chicken breast thin cut or cut your chicken breasts in half)
Grab some limes and cut them in half. (I love limes! They smell amazing and fresh!)
Squeeze out your lime juice.
I used five limes and got approx. 1/4 cup of juice.
If you have an extra slice of lime, make yourself a Diet Coke and Lime drink! So easy. So refreshing!!! (And yes, that is purple ice! It's one of those refreeze-able cubes that won't water down your drink! I love them!)
Add half a teaspoon of salt to your lime juice.
Next add a teaspoon of Chili powder.
Dump in two tablespoons of minced garlic. (Mmmmm.... It's starting to smell yummy!)
Stir your yummy marinade and pour on your chicken.
Make sure the chicken is nicely coated. Stick in fridge until dinner.
When you turn to put your chicken in the fridge.... Notice that your one year old has been so kind as to pull out all the ziplock bags for you! (Such a nice boy!)
When you are ready to start dinner. Pull out your chicken. Heat up your grill or grill pan.
When your grill pan is nice and hot, put on your chicken.
Don't flip your chicken until it has some nice grill marks!
While your chicken is grilling... Slice an avocado. (Mmmm... our family LOVES avocado!)
Take 20 seconds and make some Chipotle Mayo. Start with Mayo.
Add some Chipotle Seasoning. (See.... 20 Seconds! Totally worth it!)
Spread your Chipotle Mayo on a bun. (I used Onion Buns. Cause we love 'em. That's why!)
Put some lettuce on your bun.
Layer your chicken, some pepper jack (or other preferred cheese), tomatoes and avocados on your bun.
Put the top on your sandwich and look in awe at the beautiful sandwich you have created!
Cut in half and take a bite!
GRILLED GARLIC & LIME CHICKEN SANDWICH with CHIPOTLE MAYO
6 thin slice Chicken breasts (or 3 breasts halved)
1/4 C. Lime juice (5-6 limes juiced)
1/2 tsp. salt
1 tsp. Chili powder
2 Tbsp. Garlic, minced
1/2 C. Mayo
1 tsp. Chipotle Seasoning
1 sliced Avocado
Slices of Pepper Jack or Provolone cheese
Lettuce
Sliced Tomato
Hamburger buns
Combine lime juice, salt, chili powder, & minced garlic in a small bowl. Place chicken in a bag or bowl and pour marinade over chicken. Marinate for 1-3 hours. Cook chicken on grill or indoor grill pan. Make chipotle mayo by mixing mayo and chipotle seasoning. Allow chipotle mayo to sit for five minutes after mixing. Spread mayo on bread. Layer toppings, chicken, & cheese. Enjoy!
