Grilled Chicken Sun-dried Tomato Salad with Lemon Vinaigrette

   

I have been eating a lot of salads lately. And quite frankly salads bore me. It's not that I don't like eating them. It's just, well, boring. So, in effort to keep on track with my healthy lunch plans.... I am experimenting with salad concoctions! Hubby even liked this one! (Win!)

GRILLED CHICKEN SUN-DRIED TOMATO SALAD with LEMON VINAIGRETTE

Of course your salad begins with lettuce! I used an organic spring mix.

I used leftover Italian Grilled Chicken (Recipe HERE) from dinner the night before for a yummy protein in my salad.

Add your chicken to your salad.

Some drained, canned Chickpeas.

Chunks of Feta Cheese. I am a fan of Feta! I like it's bite, but it isn't stinky like Bleu Cheese.

Black Olives. I LOVE Black Olives! I could eat a whole can every day!

Chop up a few Sun-Dried Tomatoes.

Have you ever made your own vinaigrette? I tell you the flavor is like no other! You have the option of making your dressing to your taste. Like it more tangy? Add more vinegar. More sweet? More sugar. More salty? More... Well, You get it.

Add some salt to 1/4 C. Lemon juice.

I used one Truvia packet instead of 2 Tsp of Sugar.

Ground Black Pepper.

A dash of Balsamic Vinegar.

A little Garlic Powder.

And last, but not least... Extra Virgin Olive Oil.

Whisk your dressing until completely combined. Pour over your salad. (Remember, you can always add more dressing...)

GRILLED CHICKEN SUN-DRIED TOMATO SALAD with LEMON VINAIGRETTE

3 C.  Organic Spring Mix Lettuce

4 Grilled Chicken Tenderloins, sliced

1/4 C. Feta Cheese crumbles

1/4 C. canned Chickpeas, drained

1/4 C. Black Olives

1 Tbsp Sun-dried Tomatoes, chopped

VINAIGRETTE:

1/4 C. Lemon juice

1/2 Tsp Salt

1 packet Truvia or 2 Tsp Sugar

1/4 Tsp Black Pepper

1 Tsp Balsamic Vinegar

1/4 Tsp Garlic powder

1/2 C. Extra Virgin Olive Oil

Layer first six ingredients in large bowl. Whisk vinaigrette until combined. Pour over salad. Serves 1-2. ENJOY!
