I just absolutely Love pancakes. The problem that we have in our house is that I am Gluten Free and my Daughter is Gluten, Rice, and Egg Free (along with 25 other allergies). Because of this, I have to make substitute ingredients for "Approved" ones.
Gluten, Rice & Egg Free Pancakes
The very 1st thing I always do before I start cooking is to prepare my "Pretend" egg because it takes so long to set.
Mix 1 TBS Ground Flaxseed to 3 TBS of Water
This recipe calls for 2 eggs so I just doubled the egg.
I always use to pans to speed up the process. Way too long if you don't!

My Sister in Law came over to help me watch, Gemma. She enjoyed her pancakes too!!

Gluten, Rice, & Egg Free Pancakes
2 cups Gluten Free or Regular Flour
4 TBS Sugar
1 1/2 ts Baking Powder
1/2 ts Sea Salt
1 ts cinnamon (optional)
2 Eggs OR 2 TBS Flaxseed to 6 TBS water (let it set for at least 10 minutes)
1 1/2 cups Milk (or soy, almond, coconut, rice)
3 TBS Butter
1/2 ts Vanilla (optional)
Mix all dry ingredients in 1 bowl and set aside.
Mix all wet ingredients in separate bowl and then pour on dry ingredients. Mix them together.
Butter the pan!
