Crusty Parmesan Zucchini

   

It's almost the end of Zucchini season! (Where has the time gone?) I have to share with you one of my favorite ways to make Zucchini as a side dish. It's also my husbands favorite and he tells me I never make enough! It really goes great with steak or grilled chicken!

CRUSTY PARMESAN ZUCCHINI

You know it's gonna be a great dish when you start with onions!

Shred you Zucchini. You can use a mandolin or a little doo-hicky handheld thingy... (a serrated peeler)

Don't bother peeling please!

Start softening your onions.

In with the strands of Zucchini.

A little salt & pepper.

Red Pepper Flakes for heat.

A sprinkle of Italian Seasoning.

A nice amount of chopped Garlic.

A small pat of butter.

Bread crumbs to help bring everything together.

Of course, don't forget the CHEESE! Parmesan next.

Toss everything together. Then don't touch while the bottom gets crusty!

CRUSTY PARMESAN ZUCCHINI

1 medium Onion, sliced

4 C. shredded Zucchini

1 Tbsp Extra Virgin Olive Oil

1/4 Tsp Black Pepper

1/2 Tsp Salt

1/4 Tsp Red Pepper Flakes

1/2 Tsp Italian Seasoning

2 Tsp chopped Garlic

1 Tbsp Butter

1/4 C. Bread Crumbs

2/3 C. Parmesan Cheese, grated

In a large skillet, begin softening onions in oil. Add zucchini and seasonings. Toss in butter & garlic. When butter has melted add bread crumbs & parmesan cheese. Stir to combine. Spread evenly across pan and allow to get crispy on bottom. Flip and allow to crisp again. Serve immediately. ENJOY!
