Crockpot French Onion Soup


I am all about soups during the winter! The crockpot becomes my best friend and I am happy to impress my family with some simple, but gourmet soups. This French Onion Soup is so quick to toss together. Serve in a bread bowl with melted cheese on top. Mmmmmm.... Mmmmm.... You're gonna LOVE it!


Begin with four large Onions. (Be sure that they are not rotten. Cutting open a rotten onion is about the worse smell in the world! experience is the worst!)

Slice up those Onions. You can slice them whatever thickness you would like. The thinner you slice, the faster they will cook and become soft. I like to keep them with some substance.

Add a little sugar.

A bit of Flour.

Yes. Garlic.

Worcestershire Sauce.

A little dried Thyme. If you have fresh Thyme hanging around your kitchen.... then by all means... Use it!

A sprinkle of Black pepper. (no salt until the end please. You will be surprised how little salt you will use, if any at all)

A splash of Red Wine, Balsamic Vinegar, or Cooking Sherry gives this soup a real depth of flavor.

Pour in the Beef Broth.

Oh! Don't forget the Butter!!!

Finish adding the broth. And cover. Set crockpot on high for 6-8 hours or low 10-12 hours.

Serve in a bread bowl with croutons and melted cheese.

4 Large Onions, sliced

2 1/2 Tbsp Sugar

2 Tbsp Flour

1 1/2 Tbsp diced Garlic

1 1/2 Tbsp Worcestershire Sauce

2 Tsp Thyme

1/4 Tsp Black Pepper

3 Tbsp Red Wine, Cooking Sherry, or Balsamic Vinegar

64 oz Beef Broth

2 1/2 Tbsp Butter

Combine all ingredients in Crockpot. Cover with lid. Cook on High for 6-8 hours or Low for 10-12 hours. Serve with croutons and provolone or mozzarella cheese. ENJOY!
