Chicken is so versatile and can be a quick option for dinner!
Boneless, skinless breast or thighs can be turned into just about any cuisine for a delicious and potentially low-fat meal.
Keep an eye out for good sales and stock your freezer with boneless, skinless chicken breasts and thighs. Thaw a package overnight in the fridge and relax knowing that dinner can come together in under 30 minutes!
Creamy Sun-dried Tomato Chicken is quick and goes perfect with a side of whole wheat pasta!
Here is how you make it.
CREAMY SUN-DRIED TOMATO CHICKEN
Trim the fat off your chicken thighs and cut into bit size chunks. (If only I could trim the fat off my own thighs so quickly...sigh)
Add seasonings. Lemon pepper, garlic powder, & salt.
Add some red pepper flakes for some heat.
Stir the spices to coat the chicken and let sit for a minutes.
Slice up your onion. And chop a few sun-dried tomatoes. (Ignore the jar of pesto... Unless you are making a quick pesto pasta... Then don't ignore... ENJOY!)
Heat up your skillet. I love my Cast Iron Skillet! A great investment for your kitchen!
When it's good and hot pour in a little olive oil and throw in your chicken.
Let the chicken begin to brown, stir occasionally.
When the chicken is just cooked through throw in the onions.
Stir everything around and let the onions start to become translucent.
Add your sun-dried tomatoes. Stir in and let the flavor cook in for a minute or two.
Pour in half and half cream. (If you are feeling a little bad, substitute heavy cream... A wonderful, wonderful liquid!)
Let the cream reduce and thicken.
I recommend to serve with your favorite, quick pasta and ceasar salad!
Aaahhh.... Dinner in under 30 minutes that the whole family enjoys? I say it has been a great day!
CREAMY SUN-DRIED TOMATO CHICKEN
1 1/2 lbs. boneless, skinless chicken thighs or breasts, fat trimmed and cut in bit-size pieces
1 tsp. Lemon pepper
1 tsp. Garlic powder
1/2 tsp. Salt
1/4 tsp. Red pepper flakes
1 onion, sliced
4-5 Sun-dried Tomatoes, chopped
1/2 C. Half & Half or Cream
Coat chicken in spices and allow to sit for a few minutes. Heat 2 Tbsp. Olive Oil in a skillet. Brown chicken. Add onion and when onion begins to look translucent add sun-dried tomatoes. Stir in Half & Half. Ready to serve when cream has thickened.
