You had me at Chocolate Zucchini! I love a good quick muffin. The zucchini in this recipe is a great way to hide in some extra veggies with the kids and take your muffins to a new level of YUM!
CHOCOLATE ZUCCHINI MUFFINS
Sifting your dry ingredients is the best way to ensure a light, but moist muffin. I use a mesh strainer over a bowl. Begin by dumping in your flour.
I used Dark Cocoa Powder... I am obsessed with dark chocolate... Regular would work... But if you have dark... (You get my point...)
Not too heavy of a Cinnamon flavor. Just enough.
Baking powder.
Baking Soda.
Salt.
Sift all the dry ingredients together.
See. All the lumps out. (If only I could sift myself through one of these... Get all my "lumps" out! Hehehe)
In another bowl add your eggs and sugar.
Whisk the sugar and eggs together until well combined.
Whisk until nice and golden.
To save a little on calories and fat content, I used a combination of Applesauce and Oil.
I love finding easy and yummy substitutions for baking.
Pour in some good Vanilla.
Grate some Zucchini
Add the Zucchini to your egg mixture.
Time to combine the dry and wet ingredients. Remember to stir just until combined. These muffins taste way better when the wet and dry ingredients barely mingle together.
And... More Chocolate!
Use a large ice cream scoop to fill your muffin tins.
Looks pretty yummy already!

These are good for me... Right? Very little oil... Veggies in them... And you should eat a little dark chocolate every day...

3 C. Flour (whole grain or all purpose)
1/4 C. Unsweetened Cocoa Powder (Dark if available)
1 Tbsp Cinnamon
1 Tsp Baking Soda
1/2 Tsp Baking Powder
1 Tsp Salt
2 C. White Sugar
3 Eggs
3/4 C. Applesauce
1/4 C. Vegetable Oil
2 Tsp Vanilla Extract
2 C. Shredded Zucchini
1 C. Semisweet Chocolate Chips
Sift into a large bowl flour, cocoa powder, cinnamon, baking soda, baking powder, & salt. In a separate bowl whisk together sugar and eggs until well blended. Add eggs, applesauce, oil, & vanilla and stir until combined. Stir in Zucchini. Mix together dry & wet ingredients until just moistened. Stir in chocolate chips. Scoop into muffin tins. Bake at 350˚ for 18-22 minutes. Makes approx. 24 muffins.
