Chocolate-Dipped Coconut Macaroons


Hi, I'm Nicole.  I blog about food and recipes over at  Today I am sharing one of my family's favorite treats ... Chocolate Dipped Coconut Macaroons!  This is one of my most requested recipes and these macaroons are always a hit at any party.  The best part is how inexpensive and simple they are to make.

Coconut Macaroons:

3/4 cup Sweetened Condensed Milk
1 Bag of Sweetened Flaked Coconut (14 oz)
1 tsp Vanilla Paste or Extract

Preheat oven to 325 degrees.  Combine all ingredients.  Drop by the spoonful onto a cookie sheet that has been greased with cooking spray.  Press down any coconut ends that are sticking out, to prevent burning.

Bake for approximately 10-12 minutes or until the edges turn golden brown.  Remove from oven and transfer to cool.

Chocolate Dip:

1/2 cup Dark Chocolate Chips
1/2 tsp Coconut Oil (optional)

Make the chocolate dip once the macaroons have fully cooled.  Place chocolate chips and coconut oil in a microwave safe dish.  Microwave for approximately 1 minute, stop and stir every 15-20 seconds, until melted and smooth.

Drizzle chocolate over the top of your macaroons.  Or top with chocolate and an almond. Another option is to dip the macaroon bottoms only.  This is where you can get creative and smother your macaroons in chocolate however you want to.
