There are times when a recipe suddenly pops in my head and I scramble to make it and it turns out FABULOUS!!!!
However, the name... Not so much. The original title for this recipe was....
Cheesy, Taco, Enchilada, Frito, Chipotle layered with Taco Meat, eat with Tortilla Chips....Dish.....
(Ummmm.... That might have been a little too long...) Hahaha!
Regardless of the name.... IT IS SUPER DELISH! Hot and melty, cheesy and slightly spicy!
Perfect dip for watching a ball game or movie night.
CHIPOTLE & CHEESE TACO DIP
This dish starts out with 2 lbs. of cooked ground turkey. I added taco seasoning as if I was making turkey tacos. (I am not going to bore you with a tutorial on how to brown meat and add a seasoning packet!)
Add a can of plain ol' tomato sauce.
Add 2 tablespoons of chipotle seasoning. (You can find a variety of chipotle seasonings in the spice isle of most grocery stores. They are great additions to your spice rack! Add seasoning carefully as it can get spicy fast!)
Pour in 1/2 teaspoon onion powder and 1/4 teaspoon garlic powder.
Mix the seasonings thoroughly together. Prep a casserole dish by spraying it with cooking spray.
Spread a spoonful of the meat mixture on the bottom of the dish.
Layer on corn tortillas.
Spread a spoonful of meat on top of tortillas.
Sprinkle on some shredded Pepper Jack Cheese (You can substitute colby jack or other melty cheese to cut back on the heat)
Get a little crazy and grab a snack bag of Fritos Chips and spread them on top of the cheese and add another layer of tortillas.
Repeat meat and cheese. (I love easy layering recipes!)
Drain and rinse a can of pinto beans. And you guessed it!
Layer them on!
Another repeat layer of tortilla shells and meat. And we are looking mighty full!
Liberally sprinkle on the last of your cheese. And admire your layers of yumminess!
Bake at 375˚ for approximately 30 minutes. You want your cheese to look like this...
Sprinkle on some chopped green onions. Grab some tortilla chips and mmmmmmmmm.......
CHIPOTLE & CHEESE TACO DIP
2 lbs cooked ground Turkey (or other ground meat) seasoned with two packets of favorite Taco Seasoning (According to directions of packet)
1 15 oz. can of Tomato Sauce
2 Tbsp Chipotle Seasoning
1/2 Tsp Onion Powder
1/4 Tsp Garlic Powder
8-10 Corn Tortilla Shells
1 15 oz can of Pinto Beans, drained and rinsed
1 snack size bag of Frito Chips
8-12 oz of your favorite Shredded Cheeses (Pepper Jack/ Colby Jack/ Mozzarella)
Pour tomato sauce into taco seasoned meat. Add Chipotle seasoning, garlic and onion powder. Heat and stir until flavors are combined. In a lightly greased casserole dish, layer a spoonful of meat sauce, then tortilla shells, meat sauce, cheese, Frito chips, tortilla shells, meat sauce, pinto beans, cheese, tortilla shells, meat sauce, cheese. Cover with tin foil. Bake at 375˚ for 30-40 minutes or until cheese is melted and dip is heated through. Serve warm with Tortilla Chips.
