Cheesy Bacon & Mushroom Chicken Skillet


There are a few recipes that I pull out for dinner when I have less then 30 minutes to get everything together and don't feel like cleaning up a huge mess afterwards. I gravitate to dinners that can be made in one skillet and then plop that skillet right on the table! (I know! It's not fancy, but it's Yummy. And that is all my boys care about anyways.)

This variation of my Chicken Skillet is super delicious. Serve with a side of pasta, rice, baked potatoes, or fries. (Think simple!)


Start by dicing up some chicken breast. (As you can see, I forgot to pull out my chicken breast to thaw, so they still have ice crystals on them!)

Dice up an nice Onion. Throw your chicken in a skillet and start cooking! Add onions and let them cook too.

When chicken is cooked through, add sliced mushrooms.

Sprinkle flour over the chicken & mushrooms. Stir to incorporate.

When you see little bits of crust forming on the chicken add some Bacon. (You can crumble a few cooked slices or add some Real Bacon Bits.)

Cover the skillet with a good sprinkling of Colby Jack Cheese.  DO NOT STIR! Let the cheese just melt and get crusty for a few minutes.

Plop that skillet of Cheesy Chicken goodness on the table, serve, and ENJOY!

4 Chicken Breasts, diced into bite size pieces

2 Tbsp Vegetable Oil

1 large Onion, diced

2 C. sliced Mushrooms

1 1/2 Tbsp Flour

1/4 C. Bacon, crumbles or Bits

8 oz. shredded Colby Jack Cheese

In a large skillet, cook chicken in vegetable oil. Add onions. When chicken is cooked through, add mushrooms. When mushrooms are softened sprinkle flour over chicken. Stir to incorporate. Allow flour on chicken to cook and brown. Add bacon.  Stir. Sprinkle cheese over entire pan. Do NOT stir. Keep heat on for 4-6 minutes allowing cheese to melt and brown. Serve in Skillet. ENJOY!
