Braised Italian Pork & Spaghetti Squash

   

Have you tried Spaghetti Squash? Squash season is coming on full force and you don't want to miss out on some amazing goodness!  Substitute Spaghetti Squash for your pasta and save a few calories!

This slow braised pork is so amazing served on a bed of Spaghetti Squash. I hope you plan to put it on your menu soon!

BRAISED ITALIAN PORK & SPAGHETTI SQUASH

Begin with a pound of Pork Stew Meat. Coat with flour.

A little Garlic Salt...

Ground Black Pepper...

And Italian Seasoning....

Toss it all together nicely.

Heat some Olive Oil in a oven proof skillet.

Toss your pork into the hot oil.

Allow the meat to brown. Don't mess with the meat too much. It needs time to sit in one spot and brown properly!

Add a can of Stewed Tomatoes.

Stir everything together and put the lid on.

Slide the skillet into a 300˚ oven. (Please make sure your pan AND lid are oven safe! Some pans are but the lids are not)

Let that pork slowly break down and become flavorful little bits of goodness!

Take your Spaghetti Squash and plan your attack! It is just like any other squash and can be a bit difficult to cut through. (Please be safe when cutting this sucker!)

Slice top to bottom and scoop out seed and guts.

You can cook your squash in the microwave or oven. I did mine in the microwave. Place face down in a 9x13 pan, add a little water, cover with plastic wrap, and cook on high for 8-10 minutes. **Note: your squash may take longer in the micro depending on the size of your squash.

Allow to cool for a few minutes. It will be too hot to handle anyways! Then use a fork to pull up all the "Spaghetti Strands"

Mound your Spaghetti Squash in a large serving bowl. Top with Braised Pork. Garnish with a little Basil and Parmesan Cheese! YUM!!!

BRAISED ITALIAN PORK & SPAGHETTI SQUASH

1 lb. Pork stew meat

1 Tbsp Flour

1 Tsp Garlic Salt

1/4 Tsp Black Pepper

1 Tsp Italian Seasoning

3 Tbsp Extra Virgin Olive Oil

1 15 oz. can Stewed Tomatoes

1 Tbsp diced Garlic

1 large Spaghetti Squash

Parmesan Cheese Crumbles

Fresh Basil

In a bowl, coat meat with flour, garlic salt, pepper, & Italian seasoning. Heat olive oil in an oven-proof skillet. Brown meat in oil. Pour in stewed tomatoes and garlic. Cover and place skillet in 300˚ oven for 1 1/2 hours. To cook Spaghetti Squash, cut in half length wise. Scoop out seeds. Place face down in a dish and cover with plastic wrap. Microwave 8-10 minutes (longer if needed). Allow to cool slightly and use a fork to pull out strands. Place spaghetti squash in a large bowl. Pour meat sauce over top. Garnish with parmesan cheese and chopped basil. ENJOY!
