Black Olive & Tomato Bruschetta

   

If you have never had Bruschetta, you are missing out!

Bruschetta is a amazing, traditional Italian appetizer.

Wow your friends with this easy and scrumptious appetizer at your next dinner party, or eat it for lunch! (I totally eat it for lunch!)

 

BLACK OLIVE & TOMATO BRUSCHETTA

Start by dicing a half of an onion very finely.

Dice your tomatoes into small pieces. (You can use any kind of tomato. But I like to stick with less watery tomatoes, such as romas or cherry.)

Toss your onions and tomatoes into a good size bowl.

Add chopped garlic.

Time for some fresh Basil! Roll your leaves into a tight bundle and chiffonade the basil. (I love using cooking terms that make me sound so smart!)

We are slightly addicted to Olives in my house.

Add salt and fresh ground black pepper.

Pour in Extra Virgin Olive Oil.

Balsamic Vinegar is my favorite vinegar.

Grate some Parmesan cheese. This is the time to break out the big wedge!

One could add cheese to just about every dish and be happy!

Time for Bread! I love Bread!

Slice your bread angled for a more surface area to place your Bruschetta on.

Drizzle with some E.V.O.O.

Place your slices of  bread under the broiler for 2-4 minutes or until edges of bread are turning brown and crispy.

Arrange bread on serving platter. Top with Tomato & Olive mixture. Admire your beautiful work of art. (then devour!)

BLACK OLIVE & TOMATO BRUSCHETTA

1/2 Onion, finely diced

2 C. Tomatoes, diced

1 Tbsp. Garlic, finely chopped

2 Tbsp. Fresh Basil Leaves

3/4 C. Black Olives, chopped

1 Tsp. Salt

Black pepper to taste

2 Tbsp. Extra Virgin Olive Oil

2 Tsp. Balsamic Vinegar

1/2 C. Parmesan Cheese, grated

1 Baguette, Sliced diagonally

Combine all ingredients except for Baguette, in a mixing bowl. Toast Baguette under broiler 2-4 minutes until edges are browned and crispy. Arrange bread on serving platter, top with tomato and olive mixture. Enjoy!
