Apple Cinnamon Oatmeal Zucchini Bread

   

Ok. I will admit it. I am on a Zucchini kick! But I can't help it! They are in season. They are super cheap. They are extremely versatile. And well, I just love them! (And I am trying to get you to love them as much as I do!)

I don't feel bad consuming this bread. It is full of good things for me! Apples, applesauce, Oatmeal, whole grain flour, veggies... what more can a girl ask for! (Ok. Maybe chocolate... But I already gave you chocolate zucchini muffins! HA!)

Oh, and let me mention, that this bread makes a great on-the-go breakfast or after-school snack! Gotta start planning...School is coming up soon! (Aaaack, Already???!!!)

APPLE CINNAMON OATMEAL ZUCCHINI BREAD

You are going to start by pulverizing your oats in a food processor or blender. Basically making a ruffly ground oat flour.

See how finely I ground it? This is going to give your bread a really hearty texture.

Time to add Whole Grain Flour.

And some salt.

Baking Powder.

And Baking Soda.

A big ol' Tablespoon of Cinnamon. (I love Cinnamon! The smell of Cinnamon reminds me fall is coming soon!!!)

A little ground Nutmeg to bring another depth of flavor to the bread. Stir together all the dry ingredients and set bowl aside.

Dump the Brown Sugar in another large bowl.

Next the white sugar.

A few eggs.

And then comes the Baby Food. SAY WHAT?!

Ok. I have a ton of jars of Baby Food Applesauce left. My youngest just didn't care about baby food. I was given a large amount of jars and I don't want them to go to waste! (I donated most of them to our church food bank.)

Applesauce is a good substitute for oil. Yay for lowering the calories!

A little yummy Vanilla.

Grab an apple and start peeling! (This is good practice for the Apple Pies we will be making next month! YA BABY!)

Dice your apple into small cubes

Shred some Zucchini. (Don't bother peeling it!) Add it in the bowl and mix everything together.

Now it's time to combine the wet and dry ingredients. Be sure not to over mix!

Pour into two greased loaf pans.

Bake at 350˚  and drool for 45 minutes while some tantalizing aromas drift throughout your house.

Slice and serve with a smear of butter, applesauce, or Apple Butter. ENJOY!

APPLE CINNAMON OATMEAL ZUCCHINI BREAD

1 C. ground Oatmeal

2 C. Whole Grain Flour

3/4 Tsp Salt

1 Tsp Baking Soda

1/2 Tsp Baking Powder

1 Tbsp Cinnamon

1/2 Tsp Nutmeg

1 C. Brown Sugar

3/4 C. Granulated Sugar

3 Eggs

1 C. Applesauce

1 Tsp Vanilla

3/4 C. diced, peeled Apple

1 C. shredded Zucchini

In a large bowl mix together ground oatmeal, flour, salt, baking powder, baking soda, cinnamon & nutmeg. In a separate bowl, combine sugars and eggs. Mix in applesauce & vanilla. Stir in apples and zucchini. Combine dry and wet ingredients, mixing until just combined. Pour into two greased loaf pans. Bake at 350˚F for 40-45 minutes. ENJOY!
