This is Seriously one of the BEST Antipasto Salad’s Ever!!! My Mother in Law taught me how to make this and I could eat it Everyday!!!

You will need…
1 Iceberg Lettuce
2 Extra large Cucumbers
2 Tomatoes
1/2 to 1 lb of Sliced Baby carrots
2 celery sticks – Sliced
1/2 lb Provolone Cheese
1/2 lb Genoa Salami
1/2 lb Pepperoni
1 jar Giardiniera Vegetables
1 jar Marinated Mushrooms
1 jar Marinated Articokes
1 jar Spanish Olives
1 can Olives
1 can Tuna
1 can Anchovies

Cut up the Lettuce and arrange the Cumbumers on top of the lettuce.

Add a small layer of tomatoes and place the Provolone Cheese on top of it!

Add a layer of pepperoni.  Take the Genoa Salami and wrap 1 carrot and 1 celery piece on each slice.  Arrange it on top of the provolone cheese.

Add a small layer of carrots, celery, and black olives.

Add the tuna and anchovies.  Drain the Marinated Mushrooms, Veggies, and Articokes and add them to the center of the platter.

You can also arrange it in any order you want.  Anti-Pasto Salads are all about presentation so BE CREATIVE!!!
