Cheeseburger Meatloaf with Potatoes

1 1/2 – 3 lbs of Ground Turkey or Ground Beef (We used Ground Turkey)
1 carrot
1 Celery Rib
1 Egg (We used 1 tbsp of Flaxseed & 3 tbsp of water instead since Gemma is allergic to eggs)
1/3 Cup of Bread Crumbs
1/3 Cup of Ketchup
1 Packet of Onion Soup Mix (Lipton or Store Brand)
6 oz of Cheese (We used Cheddar cheese but Im sure any cheese would taste great)
2-4 Potatoes
Extra Virgin Olive Oil
Salt & Pepper

Preheat Oven to 400

Cut the carrots & celery

Put them in a food processor or blender

Add all the ingredients

Mix with your hands or spoon

Put it in a 10 x 13 dish and put the cheese on

Fold the cheese over the meat

Cut the potatoes and add them in the dish

Sprinkle olive oil and seasoning over them

Put in the oven for 50 min
